German Soft Pretzel Balls

Equipment

  • Bread Machine optional
  • large pan

Ingredients
  

Pretzel Dough

  • 227 g Water
  • 25 g Vegetable Oil
  • 48 g Brown Sugar
  • 440 g All purpose flour
  • 10 g Instant Yeast

Soda Bath

  • 8 cups Water
  • 1/4 cup baking soda

Topping

  • Pretzel Salt
  • Vegan Butter, melted

Instructions
 

  • Mix the dough ingredients in bread machine on dough setting, If mixing by hand kneading it for 10 minutes, cover and proof for 1 hour.
  • Roll dough into 14g balls.
  • Proof balls for 30 minutes. Preheat oven to 425 F.
  • Boil ingredients for soda bath in a large pan.
  • Boil pretzel balls in soda bath for 20 seconds. Transfer to a single layer on a baking sheet. Sprinkle with pretzel salt while balls are still wet.
  • Bake for 12-15 minutes until golden brown. Brush with melted vegan butter. Serve with spicy mustard.
